Bringing together some of the best summer flavours this chilled soup is just what’s needed on a hot day. Made in small batches by Liz Carrad using plum tomatoes, organic olive oil and loads of fresh garlic it goes really well with a chilled glass of rosé. Contains two servings.

Ingredients: plum tomatoes, sourdough bread (wheat flour, water, salt), red pepper, green pepper, cucumber, organic olive oil, sherry vinegar (sherry vinegar, colour E150, preservative: sulphur dioxide), salt, black pepper. Garnish croutons (sourdough bread-wheat flour, water, salt), org. olive oil, salt, cucumber, green pepper, red pepper and fresh mint.
