Rosé veal from Neil Weston’s family farm near Taunton. The calves are 6-8 months old Jersey males. The meat is slightly darker than traditional veal given the longer life, exercise and diet. This is a superb cut from the shin, it includes marrow and a fair bit of slow-cook meat for this traditional dish.
