Rosé veal from Neil Weston’s family farm near Taunton. The calves are 6-8 months old Jersey males. The meat is slightly darker than traditional veal given the longer life, exercise and diet. Pane your escalope and shallow fry it. Allow it to rest then serve with sauerkraut, mustard and mash.
