Two rabbit legs, ready to cook. The best way to cook the legs is to use a bit of fat as the meat is very lean. Start by browning it in the pan to get some flavour then remove it. Add some diced carrot, celery and onion and fry until soft. Add some plain flour to thicken and make a sauce with some cider or white wine. Pop the legs back in the pan and bring up to a simmer. Cover the pan and cook for 25-30 mins. Remove the legs and allow them to rest. Meanwhile, turn off the heat and add some cream or cider to the sauce and stir. Pick the meat from the bones and put this back into the pan. Serve with greens and mash, polenta or rice.
