This cured pig’s cheek is ready to eat but needs cooking as it has been curing alongside raw meat. The Romans used to tie a whole Guanc or cheek, to their uniforms and cut bits off as they marched. The perfect addition in many meals, it is the traditional ingredient in Carbonara contains alcohol
