Representing excellent value for money each hock weighs over a kilo and provides both succulent, full flavoured meat and an excellent stock for stews and soups. Popular in Eastern Europe they are often boiled and served with polenta, sour cream, wholegrain mustard and saurekraut. It’s also lovely cooked and taken off the bone and served with parsley sauce. Don’t, whatever you do add salt! I suggest you put the hock into cold water, bring it to the boil and pour the water away then start again to get rid of the salt.
