Not as strong in flavour as Mutton but with more flavour than lamb Hogget is perfect for a medium-length roast. From Kelly’s farm (Hartlake Farm) near Glastonbury. These, meaty chops are great braised in red wine with loads of garden herbs or mint sauce.
