Free-Range Pork Tenderloin



Tenderloin comes from the inner part of the loin, it forms the small steak on our T-bone chops and is the pork version of beef fillet. The whole tenderloin makes a lovely, succulent meal. Each tenderloin will feed two and is really easy to cook. Roll it in crushed peppercorns and fry then finish it in the oven. Allow it to rest then slice and serve with rice and greens. Try adding a few Sezchuan peppercorns for an authentic taste of southern China.
