Dry-aged to perfection which means you won’t be boiling the steak as there is less water in the meat. The steak is taken from the centre of the forerib with a lovely bit of marbled fat through it and a centre of fat which melts beautifully when cooked. This is an estimate only, the real weight will be different but you will only be charged for the finished weight.
