Dry-aged to perfection which means you won’t be boiling the steak as there is less water in the meat. This steak is taken from the centre of the forerib with a lovely bit of marbled fat through it and a centre of fat which melts beautifully when cooked. Fry it in a skillet if you have one, get it nice and hot, add olive oil or fat and fry, turning often to ensure an even cooking on both sides. When it’s cooked to your liking take it off the heat and allow it to rest. Season with Maldon salt and black pepper and serve. This price is an estimate only, the real weight will be different but you will only be charged for the finished weight.
