Fresh garlic is very different to the stronger, more mature, dried garlic we use through the year. Wet or Green garlic can be eaten raw or cooked as it have a milder flavour without the harsh spike of spiciness. Add it to salads, pizzas, cous-cous or fry it gently in butter and eat it as a side dish. It goes very well with our Somerset lamb or fresh fish. Aliums are great for our hearts and bring a pleasant tang to dishes. One bulb will make a good side dish for one person or a garnish for two or more.
