Description

Salsify is a very seasonal root related to the dandelion. It’s sometimes called the oyster plant as it has a similar taste. Scrub or peel the root and poach it in milk and black pepper, serve it either mashed or sliced like a carrot. It goes really well with slow-cooked beef, venison and game.
