Scallops In The Half Shell
Two scallops per person will be a good starter or three per person as a main. For best results, preheat a grill, place a slice of butter and a few leaves of finely chopped tarragon on top of the scallop and grill for 5 minutes. Remove the grill pan when the scallops are all white and no longer translucent. Allow the scallops to rest for a while and serve in the shell. The shell will remain hot for a while so take care!
