Mackerel x 2 Fish.
Packed full of omega-three oils and super tasty these fish are more versatile than you might think. Fry the fillets in olive oil and finish them with a little butter or roll them in pin-head oatmeal and fry gently to get a crisp, sweet coating with perfectly poached, soft, flesh inside. Pair them with rhubarb, gooseberries, wasabi (or horseradish), chilli jam or capers. They work really well in slow-cooked dishes too, try these recipes for something a little different.
