Dover Sole for One

Caught off the Cornish coast, not Kent as the name would suggest, these beautiful fish are considered to be in the top five list of best fish to eat in the world. Dover Sole has a delicate flavour with a smooth, deluxe texture. I’ll do all the preparation so you’ll just need to dry it off and fry it in olive oil for around 8-10 minutes or until the meat has turned white right through to the bone around the thickest part, near the head. Don’t be tempted to cover it in flour as this can act as a barrier between the fish and your taste buds.
