Large, Wild, Raw, Argentinian Prawns, Each
These are large, juicy, prawns, around 20-25cm long. The prawns are wild-caught and frozen on the boat, they are also raw even though they are orange!
Cooking tips – For best results ensure the prawns are fully defrosted by keeping them in a bowl in the fridge overnight. Heat some oil in a heavy-based pan and add the prawns. Cook them on medium for 3-4 mins. Turn them over and add some thinly sliced garlic. Cook for a further 2-3 mins and turn the heat off. Allow them to rest for 2 minutes and serve. Use your hands, get stuck in but do keep all the shells for a delicious soup or sauce later in the week.
To make a stock, simply cover the shells with water and bring them to a boil. Reduce it to a simmer and cook for 8 minutes, discard the shells. If you’re making a sauce simply reduce the stock by half by boiling off the water. If you’re making a soup simply add the whole lot as a base using fennel, tomatoes, onions and garlic.
