A peppery, smooth Lancashire cheese. The process is amazing. The curd is seperated from the whey and strained in muslin then wrapped in wax and left for 3 years. The flavours become very complex but the texture remains smooth as no moisture can escape. Shaped like a bomb, the best way to tackle the cheese is to slice off the top and scoop out the cheese and enjoy with pickles or just on its own.
